While 2 TB is plenty of storage to manage local data, I get by with 500 GB so long as I an diligent about uploading content to GDrive and deleting it from the hosted machine. The specific reason for that is during a large import into Sonarr/Radarr, the HDD will slow to a crawl and cripple the server for however many minutes it takes to complete. In regards to actual hardware - I recommend getting one with an SSD instead of a HDD if you're also planning to run Sonarr/Radarr and a torrent client on the same box. Doing so requires knowledge of Linux and a Google Business account which will cost you $12 a month.
